Aunt Mary Stockdale\'s Palisade Peach Cobbler

2 cups flour
1 tsp salt
2 tsp baking powder
3/4 cup shortning
1/2 cup milk
1-5 diced Palisade peaches, apricots or pie cherries

Syrup:
2 cups pure cane granulated sugar
2 cups water
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 cup butter

Mix flour, salt, baking powder, shortening and milk and roll into a dough ball. Flatten and roll dough to 1/2 thick. Cover with peaches; sprinkle with cinnamon and roll up like a jelly roll. Slice and put pin wheels flat in a 9 x 12 inch pan. Combine syrup ingredients over low heat; pour syrup over pin wheels and bake at 350 degrees for 30-35 min. YUMM!

Serve with a big scoop of homemade vanilla or fresh peach ice cream!
