Cin-Fully Peach Jam

4 cups finely peeled and chopped High Country Orchards Palisade Peaches (3 to 4 lbs tree ripe) 
5 ½ cups sugar (measure ahead and place in bowl) 
1 cup red hots 
1 box pectin 

Mix fresh High Country Orchards peaches in pan and add box of pectin. 

Using a high heat, stir constantly. Just before mixture reaches full rolling boil, add red hots - so they melt completely. When it reaches a full rolling boil again, add sugar all at once and bring back to a full rolling boil again. Let stand for about 5 minutes and skim off any foam with a metal spoon. Note: A rolling boil is when you cannot stop boiling by stirring the mixture.
