HCO Peaches & Cream

Ingredients: 
4 High Country Orchards Palisade peaches 
¼ cup sugar 
½ teaspoon rose water* 
Pinch ground cayenne pepper 
½ cup heavy whipping cream 
1 tablespoon sugar 
½ teaspoon vanilla extract 
Mint sprigs 

Procedure: 
1. Wash the peaches well, split them in half, and remove the pits. Cut the fresh peaches in thin wedges into a mixing bowl. Sprinkle the sugar, rose water, and cayenne pepper over the peaches and toss until the ingredients are combined. Cover the bowl with plastic wrap and leave it at room temperature for 1-2 hours to macerate, tossing occasionally. 
2. Combine the whipped cream, sugar, and vanilla extract in a second mixing bowl. Whip the cream until it just begins to thicken, but is still pourable. 
3. Divide the peaches and their juice between four bowls. Spoon the cream over the peaches. Garnish with mint sprigs and serve.
