Palisade Peach Pie

Palisade Peach Pie

2 crust pie shell 
2 cup Hungarian flour 
1 tsp salt 
2/3 cup shortening 
4 to 6 tbsp ice water 
Cut shortening into flour mixed with salt. Mix in water and divide into two portions. Place one half rolled out into 9" pie pan. 

Filling: 
4 cups sliced High Country Orchards Peaches 
1/4 cup tapioca 
3/4 cup granulated sugar 
1 Tbsp lemon Juice 
Mix tapioca, peaches, sugar and lemon juice in bowl. Let stand 15 minutes. Place in pastry lined pie pan, top with 1 Tbsp butter. Cover with other portion of rolled out crust. Bake in preheated 400 degree oven for 45 to 50 minutes.
