Peach Fuzz Jam

4 cups finely peeled and chopped High Country Orchards Palisade Peaches (3-4 lbs. tree ripe) 
5 ½ cups granulated Sugar 
1 box powdered pectin 

Mix fruit in pan and powdered pectin. Using high heat, stir constantly. When it reaches full rolling boil, add sugar all at once and bring back to a full rolling boil. Boil one minute. Remove from heat. Let stand for about 5 minutes. If there is not a lot of air bubbles or foam, take a whisk or mixture and beat jam until foamy or has lots of air bubbles about 2 mints. Pour jam into hot jars within 1/8 inch from top. Wipe rims clean, place hot lid on jar, screw on hot ring.
