Western Slope Peach Salsa

7 cups chopped fresh High Country Orchards Palisade peaches 
3 large fresh High Country Orchards Palisade garden tomatoes 
1 ½ cups shopped red onion 
3 fresh High Country Orchards garden jalapeno peppers, seeded and finely chopped 
1 High Country Orchards garden red bell pepper, seeded and finely chopped 
½1/2 cup white vinegar 
3 cloves garlic, finely chopped 
1 ½ tsp ground cumin 
¼ cup sugar 

Blanch tomatoes and peaches, peel and chop 
Combine all ingredients in large pot. Bring to a boil and cook 5 minutes, stirring frequently. Ladle into sterilized jars, leaving ¼ inch headspace. Go to recommended sources for processing procedures.
